Pêche 75

First, prepare the Peach Purée:

1. Slice 1 peach and juice 1 lemon.
2. Blend the sliced peach and lemon juice together.
3. Strain the mixture to get a smooth purée. This purée makes enough for approximately 4 drinks and can be stored in the refrigerator for 2-3 days.

For the Pêche 75 cocktail:

1. Into a shaker, add 1 oz Gin, 1 oz Peach Purée, and 0.5 oz Simple Syrup.
2. Add ice to the shaker.
3. Shake well and strain the mixture into a coupe or martini glass.
4. Top off the drink with 4 oz of your favorite Prosecco.
5. Garnish with a peach slice and a sprig of thyme before serving.
